I haven’t been eating too well lately, so I figured going plant-based vegan for this week would help me restart my wellness journey that I unintentionally abandoned LOL. HEALTHY & VEGAN MEAL RECIPES

ACAI BOWL – “ASIA BOWL” (lol)

Ingredients:

  • 2 acai smoothie packs
  • frozen bananas
  • coconut water
  • kiwi
  • strawberries
  • blueberries
  • blackberries
  • coconut flakes

Rinse and cut your favorite fruit. Run 2 acai smoothie packets under warm or hot water for 30 seconds. Break the bars in half then cut open packets. Add to blender along with one to two frozen bananas. Add a little bit of coconut water at first, then add more as necessary. Blend. Add fruit. Done!

 

 

SPRING ROLLS

Ingredients:

(peanut sauce)

  • 1 tbsp peanut butter
  • 2 tsp coconut sugar
  • 2 tsp tamari
  • chilli flakes
  • juice of half a lemon
  • water
  • white vinegar

(spring rolls)

  • Gardein Teriyaki “Chick’n” Strips (sans teriyaki sauce)
  • sweet chilli sauce
  • rice paper wrappers
  • rice noodles or mung bean noodles
  • carrots
  • cucumbers
  • sesame seeds

Cook the rice or mung bean noodles as instructed on the package, then set aside. Mix the peanut butter, coconut sugar, tamari, chilli flakes, juice of half a lemon, water, and vinegar together in a small bowl then set aside. Cook the chick’n strips in 2 tsp olive oil on medium-high heat until brown on each side. Add some sweet chilli sauce to taste, but do not get lost in the sauce. Remove from pan, then set aside. Run a rice paper wrapper under warm water for 15 seconds. Add the noodles, carrots, sweet chilli chick’n, and cucumbers to 3/4 length of the wrapper. Sprinkle sesame seeds on top. Fold the wrapper over the ingredients and roll once. Fold over the east and west ‘edges’ of the wrapper to secure everything in place, then continue rolling. Follow each step for each roll. Done!

 

Sweet Chilli Chik’n Rice Plate with Kimchi (lmao)

Ingredients:

  • sweet chilli chick’n
  • forbidden black rice
  • kimchi

I think this one is self explanatory lmao
